How do they evolve EO from a tile/grid based dungeon crawler to something better? I just don’t think a new EO can offer anything more with the old formula.

What would it even evolve to? Every other atlus franchise that "evolved" from grid based combat decided to go with open areas and encounters you can just run around instead which would utterly massacre the resource management and deadly encounters that make EO so appealing.
