I don't understand what's the appeal of this genre. It is pretty clear that it was created due to its time technological limitations, kinda like the first Metal Gear. Since the 3D era this has become completely obselete unless you're a hipster

it is, but there isnt enough content to spend a lot of time in. I 100%'d it in under 40 hours and there isn't really any replay value. It's also not really a castlevania game but more of a mobile/flash timewaster with castlevania assets.

Holy shit dude there are lots of "metroidvanias" out there, many of them ranging from at least good to fantastic. Many consider Hollow Knight to be a good one, but there are many others such as Guacamelee Super Turbo Championship Edition (note - the Gold Edition version is actually older and has less content than STCE despite the name ), so there's a lot for you to try if you want that game style.

I'm not talking about the quality. I'm speaking on a conceptual level, the 2D format is a product of it's time. I don't see the need to ask for more when you can have the same selling points but in 3D. Beside nostalgia that is.

top down shooters like geometry wars also don't work in 3D.
Same with puzzle games.

Sonic is a classic example of something that doesn't work in 3D.
JRPG and RPG in general usually don't gain any advantage in 3D, and their format usually a lot of times work better in 2D or 2.5D (see octopath traveller).
4X and 3D basically don't work in 3D.

FIFA also don't work in 3D and is just a 2D game technically.
Roguelikes also don't work on 3D.
Stardew valley clones don't gain or don't work in 3D.
2D zelda only works in 2D.
Racing games also don't particularly gain nothing from 3D and can easily work as 2D games like top gear and plenty of SNES games.
On rail shooters also don't work in 3D.
Early psx horror games also don't gain much by being 3D, since they're just glorified 2D jrpg with a 3D model, and can be easily made with DOOM sprite techniques.
VN also don't work in 3D.
