I don't know if it's out yet but the demo I played of Nine Sols was really fun. It didn't feel like another shitty soulslike wannabe like Blasphemous (that game sucks), it felt really good to play.

Fight Knight was very "meh". After a couple levels through the tower, it got boring really fast, especially with having to climb back down to save all the time.

No idea if Outer Wilds qualifies as lesser known since it's in your pic but play it if you haven't yet, phenomenal game.

I’ve played the big ones (Hollow Knight, Isaac, Celeste), some of the smaller ones that are well known here (Outer Wilds, Pathologic, Rain World) and now I want to go deeper down the rabbit hole

Highly disagree, Fight Knight was at best a mediocre beta test for mechanics that would fit in a better title. Doesn't help that the dev is a low-functioning autist.
