An undetermined amount of time occurred between Kratos being made the new god of war and Zeus stripping him of his godhood/killing him, but it was enough time that Kratos had made the Spartans into the strongest warriors in Greece and were conquering every other gods cities and worshippers with no shits given for years.
Funny enough GoW2 and GoW3 pretty much take place at the same time since he dies and goes to the island of the fates then travels back in time to the moment he died and started his fist fight round 2 with Zeus

He eventually became a god due to his undying rage and steam rolled olympus because of that

I'd say ascension is probably the most questionable, it's not bad but felt very experimental.

He explicitely got weaker after stabbing himself with the blade at the end of 3. He was always "part god" he's still mortal.That's what a demi god is.

To be fair with the blade of Olympus in his hands he was channeling his own power, the god of war power, and some of Zeus's own power.
Canonically it's when he's at his most powerful and after stabbing himself it looked like what was left in the blade was drained out.
In freeing the power of hope he may well have absorbed what power was left in the blade to live and reach some form of godhood again.

I mean in greek mythology Cratos is an actual thing, he's defined as the personification of strenght, so it'd make sense for him to be an unstoppable force.

In his defense Kratos needed a lot of help to do that, which he wasn't getting here. Not that it changed the outcome, but still.

Kratos is more god than human. His father is Zeus the most powerful Olmypian, descended from Cronos the most powerful Titan. Spartans are descended from Hercules who again is the son of Zeus and are generally portrayed in this universe as being the most capable warriors in Greece. He wouldn't be immortal but he would be exceedingly long lived on top of getting a bunch of magical buffs from other deities throughout the 7 games.
