Higher FPS helps you play better on a multitude of games, mostly online. Aside from that it is a waste of time, and people only clammer for better visuals so that they can justify how expensive their computer was.

A good monitor is essential for the experience. When I upgraded my PC I decided to stick with my 1080p/60hz for a while thinking the difference would be minimal, but when I finally went to a better 1440p/144hz monitor I noticed the importance of a proper display.
The ideal, by the way, isn't even 1440p/144hz, the more the better, a 4K/260hz will be even better, but you need to choose wisely depending on your hardware.
Analogy: keep using 1080p/60hz when upgrading your PC is basically the same as putting a race engine in your car but not changing the old tires.
