Obviously this would've been ez breezy back before Corona, but even today you can quite easily find a-OK system capable of running the recent shit just fine.

I myself am still running a 11 years old intel i7-2600K + 5 years old GTX 1060 6gb, and no game has been giving me much of problems so far.

The Series S is an enigma in the current world. I don't know shit about the input costs of its manufacture, but I imagine Microsoft must be losing money on each one sold. It's probably the best value AAA gaming machine ever sold to date, even if it is under powered.

Yeah absolutely. I believe even some cheap APUs should be capable of offering 1080p30 at low setting.

If you stick to integrated graphics like the Ryzen APU and don't get a dedicated GPU, then yes.
Nowadays APUs are more than capable to run triple A games on low-mid settings at 1080p 60fps
on a couple of more demanding ones you might have to resort to dynamic resolution or resolution scaling + FSR, but if you count those as low settings, then again, yes you can.
