There's like a dozen breeds of khajiit with very different morphological structures, user. In Morrowind, the playable khajiit are suthay-raht, who are digitigrade, while in Oblivion and Skyrim, the playable khajiit are cathay, who are plantigrade. Anyway, the answer is laziness.
