There's going to be more. There's obviously going to be a final boss and none of the ones we've seen are final boss material. I don't know why they said that other than either because they're not counting the final boss or because one of them's a King Dice-style fight against multiple single phase bosses that technically don't count as "full" fights. The achievement list that got released basically gives away that there's something like that
