It has more content than any other open world game. Even ignoring the major and minor legacy dungeons that are unique, each cave/mine/catacomb/fort has unique themes and unique layouts and provide unique loot.

That list is off because Fell Twins are literally just regular enemies and Placidusax is just another dragon fight, Stone-digger Trolls are just regular Trolls with super-armor, Bloodhound Knights exist as regular enemies and Omen Killers are regular enemies too.
