How come mario 64 graphics has aged like fine wine but most other 3D games from his generation aged like milk?

Most games from that era did not age well but the gameplay still holds up to this day and I'd imagine for some people they would mentally convince themselves that the graphics hold up as well just because the gameplay is so good.

Of course the graphics didn't age well, but the artstyle did. Quake still looks phenomenal.

but that's not true at all.
-the camera is horrible,
-mario controls like shit,
-his acceleration to actually start moving is really bad,
-his friction is horrible,
-holding backwards makes him slide uncontrollably forwards instead of stopping you,
-he struggles to turn around sometime doing a slow round-about walk to turn or skidding and sliding out completely,
-he gets caught on sloped geometry and locked into a slide state,
-crouching locks you into a long clunky animations that slides like ice,
-the dive is based on speed instead of directional input so if you're in the long period between being slow as fuck and reaching an acceptable speed you can never reliable tell if you're going to get a dive or a regular attack,
-the frames drop and it eats your inputs for wall jumps or triple jumps
-the slippery movement isn't at all suited to precision platforming yet there are precision platforming sections in the game.
-the stars kick you out of levels.
-you need to walk the same paths in each level multiple times, the game is extremely slow paced and frustrating due to it's unintuitive controls, design and physics.
-there are many bullshit design choices that punish exploration during coin collection some resulting in you leaving the level because you weren't told that hole was a level exit.
-you bonk on everything too easily and lots of things like that put you into a stunlock state where you can't do or control anything until you stop sliding.
-the bowser boss is not good enough to fight once let alone 3 times. the controls for swing bowser around are terrible and the max swing speed is way too fast to ever aim especially at sub 30 fps.
