Craft, farm consumables, explore, talk to NPCs, upgrade gear, find spells, incantations, ashes, seeds, spell books and scrolls, crafting books, PvP and co-op.
invasions and pvp are what gives the games longevity and since the invasions and pvp are trash there's nothing else to do in the game except kill bosses

its not a traditional open world where you can do other activities and mini games, its dark souls 3 but open world, purely combat focused

I did in Morrowind and it made the game really fun, especially finding unexpected secrets and treasures while I was just wandering.
Why would you need to do anything else?

it's amazing how solid morrowind is, and how to this day it's still better than new games
