I have never played Doom and I have no nostalgia for pseudo-2D boomer shooters. Is it worth getting into the series and if so, where should I start?

It's because they have a fantasy version of the original doom games in their head which never had any downtime or platforming.
This isn't true of course. The original doom games, especially on your first playthrough, had lots of downtime and even some fairly regular platforming.

No you spent that time going from A to B killing some demons along the way and then going from A to B 14 times in a row because you're looking for a keycard.

Eternal also has secrets bound to platforming btw.
