Rings have canonically been used as power sources (e.g Super Forms) and have the innate ability to give the wielder more durability so I'd say their worth more then coins which only healed Mario in his Jewish 64 phase.

and on top of that, transporting more than ~20 of them is extremely dangerous because regardless of how many you have, getting hit in any way will only drop about 20, with the rest instantly disappearing.

uh it depends on how many rings and coins are there per each level. If there are fewer rings than coins then they become more valuable.
