It was really a sequel. That would've been fine itself but it was falsely advertised as a remake.
This. It was disingenuous marketing to put remake in the title and then be like "Oh you thought that when we put remake on the cover it was going to be the same game with updates? Silly you. The game is called FF7: REMAKE"
Because people thought/think that "remake" can mean only one thing.

The soulless remake pissed on my childhood.
The newer combat system alongside all the slow ass walking/padding sections makes it a genuinely boring game to sit through. Still haven't forced myself through the DLC yet and I don't think I'll ever.

The remake was pure soul.
Reviewers don't finish games. You should know this by now. Besides Sephiroth appearing way too early, things don't get really bad until the end of the game when Barret dies...and then doesn't, and then the Advent Children show up as ghosts and all this other nonsense. Before that point the biggest complaint is probably needless padding of sections.

I can get hating the crane segment and the slums village missions, but the combat is an objective improvement.
They remade a small part and are going to sell you the game in bits at $70 a pop. The full experience will take years and cost around $250 - $300 by the end of it ever even gets finished. No thanks.

It was extremely padded, which ruined the pacing of the original game (one of the original's strongest points imo). It also did away with a lot of the subtlety, like the way Hojo just sort of blurted out that Cloud wasn't really a member of SOLDIER. That was probably one of the most well-executed twists in any vidya story, and they totally botched it. Its third sin was that a lot of the personality of FFVII's world was really toned down. That generic freight elevator that used to look like something out of an 80s cyberpunk OVA is an easy-to-point-to example of that. Oh, and episodic games are trash.
The gameplay was fine, though, and probably the best that Final Fantasy's seen in a long time. One other point in its favor is that they got the characters more-or-less right, which is a big deal considering how badly they've been misinterpreted in Compilation material over the years. The secondary members of AVALANCHE got on my nerves, though.
FFVII's only real issue is that it's too easy. The Materia system itself is easily one of the best battle systems in any turn based JRPG. If you don't like turn-based combat then that's one thing, but the remake is hardly an objective improvement.

Cause it just worse, people keeps going on about how the remake is its own thing, but the only way you can understand what the story is trying to do is by playing or knowing a lot about the original game. Do you think someone who knows nothing about FF7 would give a shit about Sephiroth or Aerith knowing about the future or Red XIII saying all that pretentious shit about destiny or Zach being alive? They took a perfectly good game and turned the shit into fan pandering and nothing more, shit is nothing but "I saw thing and I clapped!" and "now we can get the good ending guys!!"
Because its not a remake, its a fixfic sequel.

it's a fanfic, it's not even the same story
the original story is 100,000x better
i had to quit loving ff7 and now i play zombie panic source, co-op horror, free on steam
