It's too good so it makes the rest of the series look bad.

having to level up your carry weight as its own stat
that's all i can come up with
i think the main complaint is the linearity but honestly i never agreed with that because i don't think linearity is a bad thing. my complaints about it i'd say are a lot of the areas are pretty borish and the fashion stinks. split damage weapons also are useless and poise doesn't work, though armor damage absorption is the best it has been. so interesting trade off there at least.
It was a more linear than 2 but other than that I see it as an improvement in every way.
Linearity sucks because you usually wanna get your build online as soon as possible during replays.
Linearity is bad if previous games were more open.

Also, it feels formulaic. It's hard to explain, but I think it's because of how linear it's. Each area feels tailored to a specific level and there are no difficulty spikes or areas blocked by strong enemies that you have to backtrack for. It kinda ruins the exploration aspect because you know that there's nothing that can really stop you.
It's better than DS2
The gameplay was dumbed down, build variety was dumbed down, levels were bad, zero freedom, too easy.

>The way poise works for enemies, or more specifically their lack of it, their high hyperarmor combined with Bloodborne-esque flailing enemies, means weapons either need to attack fast enough or stagger long enough to stunlock enemies, this meaning straight swords which do both are the ideal weapon.

All this meaning It forces you to play a playstyle for the majority of the game instead of letting you play how you want as everything else is suboptimal until near 2/3 the way in. This is terrible design for an RPG
I'm replaying it right now and I forgot how fucking annoying is that you have to travel back to the Firelink Shrine every time you need to level up

infinite stamina to quick roll spam from the very start of the game and the entire game is designed around that. estus heals instantly. brain dead trash game.
Just like Demon's Souls
The way poise works is that it only activates when the player performs an attack with hyper armor. I think the idea was to give poise only to players who committed to a combination of large weapons and heavy armor.
The issue with this is that defenses are pathetic, even for heavy armor sets, and poise has diminishing returns for some reason. Therefore, the most effective defensive stat is vigor, something which every build benefits from.
It's basically useless, the best you can do is equip medium armor and trade every once in a while.

whenever you come back you see who came and went and it gives you some down time after you beat a hard boss and got many souls

I didn't like the way some areas(Irythyll, Lothric Castle, the DLC areas) frontload the harder enemies just to put generic zombies in the back.
Magic was extremely underwhelming.
Irythyll sword was too good of a weapon.
First third of the game up to Irythyll has too many "Bed of Chaos" type bosses.
