It's not that there isn't a better alternative as much as the winning conditions and how we achieve them haven't changed since the conception of rpgs. So naturally we will find our way to these roles.

It's a lot like how games are very similar because we haven't changed the controller in a long ass time.

The mmo role trinity wasn’t decided arbitrarily.
People naturally started trying to fill those roles before they were institutionalized because they were efficient.
Even GW2, which explicitly went out of its way to not have tanks or healers, wound up having people play tanks and healers because it’s just what works.

It is like real world combat. Nobody "created" the trifecta of infantry, artillery and cavalry as a basis of warfare it is just a physic of how war/combat functions, every weapon or tool of war fits into this trifecta
Similar to the MMO trinity, it is a natural physic or phenomena, nobody really created it.
Just as an eg, Overwatch tried to get rid of the trinity but the game itself naturally fell into the trinity on its own nature.
Meaning we will never really be rid of it.

I think games designed around solo play are better, even pvp games.
Can't have a trinity if you're all by yourself.

They tried to get rid of it with tank, dps, healer, support but it ended up itself just the trinity.
I was using that as an example anyway as it is the only one I could remember that actively tried to break the trinity.
ESO tried to say as a marketing ploy that the trinity is not needed but it became quite obvious that was bullshit from the first dungeon.

because it's how games work. they're literally number games. tanks reduce the incoming numbers. healers undo the numbers dealt to everyone. damage dealers increase the rate at which you put numbers on the enemy. you literally cannot change that without fundamentally changing how coding works. every new class or job introduced will end up doing one of the following: reduce incoming numbers, or increase outgoing numbers.

What if the bosses had multiple mechanics/bars that need specific roles to handle?
Say the boss had a stun meter and only big slow hammer users could build it up to a point where the boss gets stunned, enabling the dps to use their most powerful moves for a set duration. Completing the fight would be way harder without these hammerbros, so it's now optimal to have some hammerbros in the raid. Now the trinity isn't a trinity anymore, right?

One person deals damage to the enemy.
One person takes damage from the enemy.
One person mitigates the damage dealt by the enemy.
If DPS was able to take a lot of hits then the tank would be useless. If the tank was able to heal himself the support would be useless. If the support was able to deal a lot of damage then the DPS would be useless. There is no wiggle room anywhere, all the bases of dealing damage, taking damage and mitigating the damage dealt to players is covered. Nobody can encroach on anyone else's job lest they become useless and nobody can be removed from the equation lest everyone die.
It's why overwatch had such massive issues with tanks and why GOATS (3 tanks 3 supports) became the meta for an extremely long time. Most tanks in OW1 are not tanks, they are fat DPS who can deal just as much if not more damage than the average DPS character while having better CC, defensive abilities, better ultimates and 2-4 times the HP of a DPS. Tanks in OW1 do not tank, at best they use shields to very temporarily hold down a position or to advance on the enemy but once engaged tanks are no longer there to soak up damage, they do just as much shooting and damage-dealing as DPS characters while the supports brainlessly shove a healing stick up their ass, shoot their giant unmissable body with a healing gun or just stand there while they passively heal everyone.
The triangle in OW1 is fundamentally broken and it's one of the reasons the game balance has always felt so wrong. OW1 is the best example of why you don't fuck with the triangle if that's the style of game you're going for.

There is, you can probably think of several on a whim. It just takes too much skill for the players(and effort to program), which makes it an unappealing alternative business wise.

An MMO needs to attract a large audience to be profitable, and needs to keep whales invested. Whales suck at video games, so something as simple as Holy Trinity is necessary to keep them from rage quitting.

Well what are they?

Wrong, it's the other way around. People filled those roles because those roles started being designed for due to feedback from "top raiding guilds". Before then, while most content was fairly easy to abuse with tank-and-spank, there were still wild cards thrown that didn't adhere to tank and spank, like bosses that would target healers

The trinity appears in all kinds of games not just MMOs, it's like a law of nature, the path of least resistance.

What about sustain vs. burst playstyles? I like this duality a lot.

Well and also remember that during that time there were different MMOs with different systems in place but all of them just were sort of forgotten about as WoW got bigger and bigger.
