I think they bit off more than they could chew with Starfield. It's really an expectations versus reality situation.

That's gaming in general dude. There was a tech boom in the 2000s and kind of late 90s. That allowed there to be staggering advancements in graphics, design, and well everything...almost every 2-3 years. Look at games now. Look at some recently released games vs games 7 years ago. The differences aren't huge enough to notice. And if they're noticable, most people are too poor to afford rigs that can make those differences matter.

They probably have released Elder Scroll 6 right now if they didnt remaster skyrim for the 6th time and make starfield.

Instead of using the power of new hardware to do something unique with mechanics or something, they all want best looking game.

they're simply giving people what they want. even here everyone that complains about graphics ruining everything will shit on any game with pixelart or low poly styles.
I agree, but it didn't happen without reason. Most people will check off a game simply for bad graphics. The amount of time's I've seen feedback for a game like project gorgon with "The game is ok, but I just can't get over the graphics" is a lot.
The trick is you need to design shitty graphics, but do it in such a way that it is a unique style ot your game. That way it "looks good" without looking good. Borderlands and Albion are two that come to mind. I think WoW can kind of be considered in this realm too. Runescape to some degree.
Persistence is always something I felt was neglected. Permanent damage to the environment, shell casings, bullet holes, corpses, etc. These days it's possible to implement such things but it's never done.

This trend was started by Ubisoft. Third worldies liked when Ubisoft getting more and more close to realism with its AC and Farcry series. Other game companies follow its steps and the rest is history.

Sure, but the improvements in graphics have made budgets so big that no one wants to innovate because with that much money on the line you can't afford to take any risks.

It has more to do with corporate bloat, corporate politics, and the talent being driven off. If we get a bunch of hatchetmen CEOs like the new guy at WB who's #1 question is "How much money are you making me?", I'd expect projects to speed up significantly.
