So you are killing a gigantic proportion of potential recruits outright and condemning the ones that do make it to an early death, so they can sense nearby orcs and on the extremely small chance that they will need to kill an archdemon.

Sounds like pretty good reasons to me, I assume when there's no evidence of a blight they don't make them drink it although I don't think the games suggest so, I just can't see how they'd keep their order going if everyone dies at 50
The point of Grey Wardens drinking darkspawn blood is that they become immune to being poisoned by the darkspawn infection, so it's like an immunization.
You forgot they can also hear the commands of the archdemon, so the implication is that the archdemon is communicating to them through their tainted blood, and the grey wardens hacked into the communication.
This is also a reasonable enough justification for grey wardens needing to slay an archdemon for me to suspend my disbelief.

It's to make sure those they recruit have a resistance to the body corrupting blight since they're going to be exposed to it on a constant basis.

Being splattered with it would just hurt you and make you sick, and the immunity/tolerance developed wouldn't be that strong, after drinking it the wardens could probably bathe in the stuff and nothing would happen to them, which makes them uniquely suited to destroying the darkspawn army.
The potion used for the Joining is more than just Darkspawn blood, it’s made with a bunch of other ingredients to make it possible to survive. Just drinking straight Darkspawn blood is guaranteed to kill you.
that really doesn't make much sense, if you gain immunity from exposure why not just have them fight darkspawn like a regular army does and just select the ones who endure the exposure.

You would only need a handful of guys to fulfill this role, not your entire organization.
Again they are just killing their potential fighters for no real good reason.
Because getting the immunity in advance means a more reliable army that won't cripple in the thick of combat from a slow dose of poison. Getting it out of the way all at once is more tactically sound, plus it gives them the power to tap into the archdemon's ham radio station.
