like all old games, they did more with less
the restrictions consoles and old pc hardware gave games made devs innovate and find workarounds, something that doesnt exist now
Not sure I found the super low res 3d models quite soothing myself. There is only a few games that actually hit that graphical 'style' on steam. None of which actually allow you to enable a dithering filter sadly.

almost all of the older games (if not all) looked better on CRT.
people say it's a buzzword but it's unironically because these games had soul - you could tell the devs did it because they love it.
Now it's all about profit, the mass market and pleasing the shareholders

Devs couldn't achieve much graphical fidelity so they spent more time thinking about how they could make their shit graphics look nice. Now you need a gorillion people to model and texture and animate everything and very little time is spent on the actual artistic aspects of visuals.
