Looking at the forums apparently the old assets including Caucasian are still there, in game folders. It's just that for whatever reason the game loads only the new assets instead of both. Probably will get patched with a hotfix.

Look in the files, not only the old portraits are still there, all phenotypes are named stuff like Asian, Latin, Caucasian, Middle Eastern and African. The slingshots a new megastructure, A fleet enters it like a gateway, and your cursor becomes a huge aiming reticle where you can select a landing point, but you'll arrive at a random star within the reticle. Haven't tried it myself but feels like it could be very interesting.
