I don't know about Dark arts, but for MNK and SMN its because the jobs were clunky pieces of shit that no-one enjoyed playing.
Kaiten is literally a one button press before using a big move so its not that bad. As for mug changed to TA I have absolutely no clue what their reasoning could be.

Kaiten is a useless filler button, there is literally no scenario in which you would ever use an iajutsu without pressing Kaiten first so it's not like they're removing some sort of decision making or resource management. Everything being autocritw is fucking stupid though, if SAM gets that shit then every big dick spender (Xeboglossy, Dancer Steps, ect) should be auto crits too.
