You just got to learn which moves are unparryable, it's a normal fight aside from that. I think it was the big vertical flaming slash, and maybe one other flaming melee attack that had to be avoided.

It's completely antithetical to the entire game up until this point. It's just a big boss you have to wail on until it dies, posture is irrelevant. It genuinely feels like it should have been a Dark Souls boss
It actively discourages parrying with attacks that knock you down when parried and applying a ton of burn if you parry any of the arm attacks. Not to mention the literal one hit kill attack that turns its entire body into a hurtbox and punishes you for thinking you had an opening to attack
Literally git gud, Demon of Hatred is one of the best fights in the game. A much bigger challenge that Isshin.
Use the demon stunning whistle to cheese phase 3. That's the only really bad phase.

Except that you can parry every single attack of his that doesn't have the floating death symbol, like every other enemy in the game. only difference is he has no posture break. The game already hands out prosthetic tools like the umbrella and whistle that counter him.

Yes and that's the problem, you're expected to fight a souls boss as a character with no tools to fight a souls boss

Yeah I said that, you're still discouraged though because parrying two hits from the arm will burn you and parrying almost everything else stuns you for a second. And the fact that you can't posture break him means that parrying gets you no reward, you just need to run around and whack him between his attacks. It feels completely out of palce

This is how I play everything. I only start enjoying the game again after I beat the challenge, but until then the game is garbage for being hard.

The only tool you need is proper positioning.

Well, the ones that don't kill you through a parry, I mean. Technically they're parryable, like Blazing Bull, but it will kill you through it.

Once you get right up to him (which is where you should always be) you only have to parry 1 move, his right foot stomp, and run back when he does his super buttstomp which is reactable and avoidable by even the slowest brained player, grapple back and do it again
If he ever flashes a death mark just jump and he will never grab you
