The souls games, ever since demon's souls, have had multiple ways to either increase or decrease the difficulty. The unfortunate people who are cursed with lower IQ will this as an issue with "game blance" while in fact it is working exactly as intended. You can cast spells to make yourself invisible, you can summon help, you can grind levels, you can stock up on items and you can even choose to go to a whole new area and try to find something less challenging. On the other hand, you can wear items that attract extra enemy attention, use items that make you take more damage, self impose challenges like no leveling at all or no weapon upgrades.

So the game doesn't need a fixed "easy mode" because the easy mode can be activated in game with powerful effects.
