Roller Coaster Tycoon 2. Still an incredibly satisfying park builder over 20 years later. Plenty of terrain to form, paths to optimize, and trains moving around. If you download the OpenRCT2 mod the object limit and map size is absolutely insane. The mod also lets you hack ride types, tracks, and operating modes so you can create some very complicated machines out of the rides themselves, like computers or whole transit systems.
