they're dirt cheap on steam right now, I say go for whichever one sounds interesting. Although it would be best plot wise to play through them in chronological order: XIII -> XIII-2 -> LR
keep in mind the first 18 or so hours of XIII are quite slow and limiting, but if you are interested in the world, you can read the datalog in between chapters to learn about it, which can keep oyu interested. The combat system does have depth, it just takes a long time to get there.

You need to endure 30 hours of corridor gameplay with extremely underpowered enemies before you finally get to explore an open world with some challenges in FF13 but beyond that it's pretty okay.
I did buy the entire trilogy for like 25 bucks during a sale last year and beaten it after 200 hours of gameplay. If you ask me these games are definitely worth playing at a discount, the story ain't too bad and they still have some pretty damn great music.
FF13-2 is especially underrated, even if it requires some manual fixing to the exe file to get rid of the inherent crashing issues. That game has the best battle system imo and even lets you capture and train the various monsters you fight. Also Noel is one of the best protagonists in the series, the same goes for Caius as a villain. Absolute kino.
Lightning Returns aka FF13-3 is a decent finish to the whole story and will make you feel glad that you're done with it. Its constant timelimit ala Majora's Mask will most likely turn you down at first but the ability to freeze time makes it a lot more bearable.
