There's a reason he doesn't make videos anymore, he overthinks his scripts way too much and is too obsessed with trying to be "interesting". Ends up looping over and becoming stupid.
No one in their right mind thinks Dragon God is a better boss than Guardian Ape, or that Phalanx is better than Iudex Gundyr, or that Storm King is better than Rykard, or that Penetrator is better than Owl, I could go on and on. Fromsoft has gotten significantly better at boss design since Demon's Souls. And level design, and enemy design, and moveset variety, and world design, and even lore. Saying that delayed attacks got a bit ridiculous in Dark Souls 3 (and now Elden Ring) is a fair criticism, but you don't need to disingenuously jerk off Demon's Souls to do so. If he was honest he would have praised Sekiro for changing up its gameplay, but he just spouted the same bullshit criticism about it being more of the same, even though it changed way more than Dark Souls did. He even once claimed that Ema was just a Maiden in Black rehash which makes me wonder if he even played Sekiro.
It's also bullshit that Demon's Souls wasn't about difficulty, that was one of its biggest appeals. If the game was as easy as its peers it would have been much less interesting.

The problem here is that you think more involved boss fights equate to better fights while failing to register that with ER's mediocre combat mechanics (which have barely evolved since DeS 13 years ago) the combat still isn't particularly fun or interesting regardless, and so DeS having a selection of bosses focused around being unique experiences instead of ER having dozens of copy paste bosses that are all completely forgettable because they're all intense action sequences with obnoxious movesets that you have to memorise actually made for a much more interesting game.
The only one here you actually have a point with is Storm King vs Rykard because both of them are fights revolving around using a specific weapon to decimate the boss. At the same time though Rykard is more of an actual fight with the weapon being far less effective, while the Storm King is once again more about the experience with the Storm Ruler absolutely destroying it.
I think the truth lies somewhere inbetween. Obviously his criticisms of Sekiro are shallow because Sekiro isn't even meant to be a Souls game. It seems like he's just mad about where FromSoft has gone and takes it out on a great game that's not meant to be anything like Demon's Souls. As for Elden Ring, the bosses in Elden Ring are great, but also a bit too much alike. I wish they'd mix things up a bit more in this regard. And he's right that these games weren't primarily about the action aspect, but became more so as time went on. The level design suffers as a result. The design is action-oriented: fight a ton of enemies, many of them quite strong, and get to the boss. The problem is that in Stormveil f.e., I can just run past all of these enemies. The only exception is the room with the knight if you take the sideway. It's terrible level design when the level doesn't force you to engage with it. We see the exact same thing in DS1, where all you had to do to finish Lost Izalith was kill bosses and run to the next bonfire. Lost Izalith was so bad because there wasn't enough time left by the time they started working on it. That's why I suspect they left the level design for last, and, since they ran out of time, it became incomplete. It's sad because Elden Ring has virtually none of the great level designs seen in the previous games.
I had a lot of fun playing the game. I'm not on SSRIs and shit though so I can recognize fun innately.

Now that I think about it, there were barely any traps in ER at all, and what traps there were were almost entirely in the catacombs side dungeons. Many traps can be fairly easily avoided once you know where they are, but there's certainly nothing in ER like the iron maiden ballista in Latria in DeS, which like you indicate, actually significantly affects the level design and the player has to engage with it. Outside of floor panels that trigger arrows and a few spots with magically appearing iron balls rolling at you the only trap I can even think of in ER is the chariots in some catacombs, which while did work for those, were also entirely self-contained in areas much shorter than Latria was.
