Greatshield, heavy thruster, very heavy armor, no vigor, no sorceries/incantations, and 0 buffs is the ideal way to play Elden ring. Prove me wrong. It has the most fleshed out moveset and playstyle you could have. Robbing yourself from actual fun if you don't play it this way. You get the most out of defensive options, without relying on dodgeroll as a crutch. thrusting swords have the most varied moveset, with great running attacks, an actual useful backstep attack, being able to cancel heavy charge into a more defensive move, and access to very good weapon arts.
Rolling is easier. >Rolling uses less stamina (without using crutch shield buffs) >Can roll with a single point of stamina filled with no repercussions

Your character looks incredibly thin and small, but due to FROM not showing this by reflecting it through their Stats system, you just look cool for now. Wait until they are forced and have to show you what you actually look like.
