Choking and playing defensively gets me killed so much in these games. I always get more nervous the further away from a bonfire I get, and if I'm fighting a boss that feels far away from one, I'm panicking. I remember dying to him once because of that and getting pissed as a result.
These games are honestly way easier when you are aggressive. Some bosses just fucking fold under pressure, and some just die before they start feeling dangerous. Sometimes you also die but at least you die faster and try again faster.

The game got noticeably easier when instead of always standing behind a shield and waiting for enemies to attack I just said fuck it and two handed my battle axe

Yeah I used to be the same until BB broke me of the habit since you can't turtle in that game. Now in ER I keep a shield on me but I barely use it. Give a shieldless run in DS1 or BB a shot and it helps

I died to the tutorial fuckface boss a ton of times the first time I played. I didn't see the door. Got him down to below half a few times before finally seeing it.

Yeah, in ER I felt like the shield was literally pointless in the early game. Any boss I fought would basically break through my entire stamina bar in one blow and stagger me. I just stopped using it. Now, in the late game, I've been surprised to see that I can actually block things again, having forgotten all about it for most of the game.
I've long since learned to be aggressive too. It's just way easier.

Is not even possible in ER, I feel. The bosses don't really give you the time to attack after blocking unless you're also positioning yourself correctly. I just block when I know I fucked up and I'm about to get hit.

Magic still breaks poise easily enough and the retarded AI dodges into your shit if you just play around the input reads. Some bosses have these lengthy woah big scary roar animations during which you can break their poise and crit them and they're half HP before the fight even starts lmao.

In a modern FromSoft game, I'd die to pinwheel on purpose because with a unique design and an intro cutscene he probably has dialogue for killing the player.
