A proper wild west game would require the characters to have a consistent style meaning you're options for cosmetics are limited. Publishers don't want this, they want something like Fortnite where you have a variety of styles to sell to the player. Fuck having a cohesive style, sell all the cosmetics. Have space men getting in gunfights with furries and then when they die they can look to the shop to browse the huge catalogue.

Red Dead Redemption is a massive hit.
I'd argue Borderlands has wild west elements in terms of artstyle as does New Vegas. At a minimum, Borderlands 3 does have an entire DLC focused on WW content.
Recently, The Mandalorian drew heavily from Wild West films for inspiration and it was a bigger critical success than the Sequel Trilogy.
