I personally liked Kaguya, Megumu, and Narumi's cards best. Saki and Byakuren's is pretty good too. Sannyo's is also good but you have to cap spells in order for it to be good

Bomb builds are the easiest way to beat UM. Megumu's Card is probably the best card in the entire game, there's no build where it's useless. +1P or a Bomb piece is just that good of a powerup given UM's harsh power loss. Sutra is of course essential to any bomb build, to melt bosses for free and be invulnerable for a while. These two cards synergize fantastically because, as some may not know, Sutra also has the side effect of making your active cards recharge faster. In a 3 card build, the ultimate "I don't wanna play the game" would also use Tsukasa's Card, which is just Power Bombs, but i'd only recommend it if you really wanna cheese the game. If you have it unlocked, Centipede synergises very well with both Eiki & Eirin's card, for the ability to take a hit while not resetting. You can do these even if you don't have 3 cards, but if you do, leaning towards more ressources is good: I know I liked Patchouli's Card for the Centipede Build, and for the Bomb Builds, Jizo is very nice. Pipe + Fang is also a decent option. Even if you're not sure that you can capture cards, Fang will make sure you will, for some, and that way you can get a decent amount of lives.
More to the side and that can be good if you wanna mix things up are screen clear cards like Miko's or Utsuho's, the active shields, with Sumireko being my favorite when I was a beginner, but Raiko's is probably better.
