Alot of old games had a more fuck you approach to the player beating them. But this usually meant the player was given pretty strong tools to play the game with. Too many modern hard games either only have a few overtuned tools or none at all and it comes down to playing a meta pattern/AI manipulation. Alot of said games are also only hard for high damage punishments and less so for cool patterns/mechanics. Alot of new games that are too easy are just designed to be too easy for everyone to beat them. Which can also lead to the hardest difficulty feeling lazy and slapped on because the dev barely expected any one to care.

A few factors were involved. Small teams with more creative control because the games were cheaper to make, so they had unified vision. No ability to fix shit later, so if you released a pile of shit you got dropped for wasting people's money. So while there were plenty of buggy pieces of shovelware then too their was at least a penalty for making that.
Its also a little bit of unfair perspective. AAA of the last few years can't hope to have as many good games compared to the last 30 years even if the average AAA game today wasn't creatively compromised by shareholders. And indie games are a closer match to what old day AAA use to do and those are pretty damn good today.
