Sorry I didn't watch a YouTube video where in order to dodge it you have to go against your instincts and do a very specific dance where you first run away, wait for her to finish her first flurry, then roll into her during her second flurry, and then run away again while her last flurries go off away from you.

there's really no reason to cope this hard about being bad at souls games

Just be honest and admit that that move is utter bullshit. You try and roll the first flurry, you're dead no matter what. No instinct can help you avoid dying that flurry. You have to either trial and error to figure it out by doing a bunch of random motions and eventually stumble on the right set of moves at the right time to dodge it consistently, or hope the RNG goes in your favor.

It's unfair is what it is. Everything else in this game can be learned by knowing the timings of the attacks and rolling at the right moments and punishing openings. That attack will punish you for rolling unless you first run away and then roll into it, and then run away again. Otherwise if you try and roll any of the flurries, the next flurry will hit you as you recover from your roll and will stagger you and kill you in the next flurry.
