Time is a relative concept for Rosalina considering she's immortal. Do you mean the time between Galaxy 1 and Odyssey? Or 3D world and Odyssey?

Well Galaxy 2's existence kinda fucks with things since both involve the star festival which only happens once every 100 years, so they can't have both happened in the same continuity. The only logical way for both games to exist and be "canon" is if the events of Galaxy 1 happens, then the universe continues one for billions of years and ends, with Rosalina guiding it's rebirth as she does. A new universe is born, and time passes until the exact moment of the star festival occurs again and the events of Galaxy 2 happen. In this way, Mario and his pals are technically meeting Rosalina for the first time in Galaxy 2, but Rosalina would already know them. So what was she doing? Probably just cruising about guiding the universe. Same sort of thing if we're talking about the time from 3D world to Odyssey. Time probably doesn't really mean anything to her to be honest.

Odyssey took place in a single planet not across the universe, the stakes were far lower.
