I don't get it.

I have never seen a developer cause such intense FOMO in the general game playing public as much as Fromsoftware does. Why does everyone feel that they NEED to be involved with this developers games? No one screams this hard about how unfair the developer is being when it is countless other difficult games. No one starts citing how much they "just care about the disabled" when it's Ninja Gaiden or whatever the fuck but the second it's From there is an entire debate about it without fail.

just allow cheats. this game plays like an old school video game so why not allow braindead fun cheat mode with infinite mana, never staggering, infinite hp etc.. seems like a fun game to have it on.

I picked up the Stranger of Paradise demo and it seems like this is the logic it's following. From what I can tell, the game is build around Hard Mode since that gives better rewards and equipment according to the difficulty select.
But there's also a normal mode and a story mode, making the game easier. If you select story mode, which makes the game a breeze, you can still activate Casual Mode. Which I can only assume is designed entirely for game journos and plays itself.

The only bosses I felt were really unfair was Margit and Melenia. Margit is unfair on purpose because he is telling the player that they should really level up instead of just trying to rush through the game, but Melenia is flat out unfair and beatable really through cheese tactics

Because its popular, and since journalism ia a field of snakes, the social pressure of them not being able to play it eats them and rather than persevere & engage with the game some more, or at least understand that a story of effort, doubt at one's ability to succeed, and glorious, or sometimes spiteful victory, is a rich & worthwhile choice to design a game around and that'll arguably serve more to the game than what's mentioned above,they'd rather turn a blind eye on that.
Of course, when it's, say, Mushihimesama, that does it, they can simply ignore it, that game won't shape upcoming developers' ambition or if they do chances are they'll make another shmup the general public can ignore. Maybe an "esteemed" developer will mention it in an interview once in a blue moon, but it mostly ends there.
When it's a game that's projected to sell millions, they feel their vision being threatened, they can see that this vision of gaming might spread. Arguably, their job might be at staake, because they themselves would have to put effort & go through this same, very much non instantaneous experience in order to have any kind of legitimacy to review the product they're talking about, otherwise it's at best the viewpoint of someone who dismissed a game, which has its worth actually for consumers unsure about a game, since you can identify with what a person did not like about a game, but that's usually second to listening to someone who actually went through the game.
That's how I see it, a defense mechanism, if you will, though probably a worthless one since western studios are likely too thorn at this point to commit this much, though we never know.

I've tried to explain so many times that the difficulty is a feature and apart of the appeal. They design the whole game around the fact that players will be dying constantly. People just can't handle losing.

There isn't even really a story to it. All the lore is locked behind item descriptions and fan theories.

This. I think they are seeing that stuff like From games might set some new precedent for just telling audiences "no." I think they expected that the more mainstream From games became the more they would be forced to buckle under pressure to conform to status quo norms of AAA video game design and that is not happening. Even now Miyazaki has said they will just continue to make challenging games and that it is perhaps "just part of out identity after all"
