LoL, DotA2, CSGO and Valorant are the big ones in the west that are still remaining the most popular. Then there's smaller games like OW/Rocket League/Apex Legends/CoD/Halo/etc. that are decently sized, but usually remain out of the general spotlight.

Because nobody who streams is actually playing videos games to enjoy them. Video games are simply a means to an end for narcissistic external validation.
