What GRRM actually did was write up the backstory till up to T Shattering then handed it over the the from guys to do whatever with. He also offered to write a tie in novel taking place during the shattering but Miazaki declined due to wanting to keep the souls mystery storytelling alive.

Why would he leave? He's making his dream games come to life and working with people he respects a lot. If Miura were still alive you'd better believe he wanted to make something with him though honestly we'd probably have a Elden Ring situation where no one would really know what Miura even did during the project in the first place just like Martin.
