In some ways you'll enjoy it more because the "tricks" FromSoft always uses will actually surprise you. There are some gimmicks and tropes that will give you an "Aha" moment when you figure them out, but which don't do that for me because it's fairly easy to predict the gimmick from Dark Souls. Elden Ring is like a mix of all these tricks used in their past games put together in an open world.
The downside is you will probably be terrible at timing and you probably aren't used to reacting to boss movesets like you would be if you played other Souls games.

Possibly. I've been watching some hololive girls play it and one of them who'd never played a souls game seems to be having a great time. I think new players actually have a sort of advantage in that they're not prejudiced against many of the gameplay options which souls vets consider "cheating".

Probably yeah. Just be aware you lost out on 13 years of gitting gud and adjusting to the combat getting faster and more difficult every game. Just make sure you use stuff like spirit summons and OP magic.
