he was the lord of the age of fire, and he was happy to let humans do their own thing (which usually involved worshipping him because he was bigger and stronger than them, and essentially created civilisation as they know it).
Once Dark was discovered, they found out it's the literal antithesis of fire and it turns out that every human is linked to it at the soul-level, Gwyn didn't even order every human murdered or anything like that, he just sacrificed himself to try and re-light the first flame, to keep the age of fire going longer because no one knew what the age of dark would look like, but judging by Oolacile and New Londo it looks like a pitch black void of nothingness that swallows everything

The Dark Soul grows as the fire fades. Humanity, which is little fragments of the Dark Soul, can be used to keep the fire going by burning them. So Gwyn's plan is that he links the fire to humanity with the Dark Sign, so that when the fire fades it starts sucking humans' souls out and eventually one really buff human will rise up and link the fire to become the new lord. But the process isn't perfectly efficient, and humanity gets burnt more than it regrows with each cycle, eventually leading to the world reduced to ash and cinders in DS3.

Gwyn created the Dark Sign and cursed humanity with it because he was afraid of the Dark and humanity's potential with it.
