You're just running around aimlessly, in reality there is not much content if you use a guide and pin point where you want to go.
They really did dumb down the game, the quest chains don't really interfere that much you can't really fuck up a quest like the other games. So Miyazaki did lie in some areas. Its quite simplified now.
There is a long main quest
and there is short NPC quests
the ways you can fuck these up are very obvious because you get locked out of loot, for instance giving the stormhawk king to Nepheli or attacking bears so blaidd aggros you and not absolving it at the church of vows, killing selvius

The game is as long as you make it, I did NG+ to get the other endings and you can go to the capital after two bosses.

Copy/pasta bosses aren't wgat I'd call content. I love the game but they're my biggest complaint.
I couln't progress the Yura quest. I thought it was because I joined the bloody fingers.
I do it so I can learn boss patterns with no investment. That way when I helped some scrub through duo crucible knight by parrying them consistently I felt like a god.

Not really, you just keep most of your items and levels / stats.
Story is reset, you have to go around and gather key items again too.
