Pure dex and pure str are not viable without summons BUT str/faith and str/int are really powerful just like any hybrid builds. Str faith has blasphemous greatsword from Rykard that can absolutely destroy most of the annoying mini bosses

I don't remember at all where i've found any of these, the coat that boosts the jump attack is the one that looks like the black coats of the nights watch in game of thrones. The jump attack talisman i think you get it pretty early in the game so it may be somewhere in limgrave but i'm not sure. The physick pearl i don't remember at all but it's a powerful one so it may be in one of the erdtrees of caelid but i'm not sure at all.

I use a big boy mace. But I'm not pure STR, I'm 50/50 with faith. Never summon, never shoot spells on bosses. Yep, it's hard. And it's a good thing. They made the game both easier for new players by adding summons and other tools to the game and harder for old players by buffing bosses.
