Sekiro is the easiest Eldensoulsbornekiro game once it clicks. Still a great game though.
Sekiro is much harder, the enemies all have more health thanks to deathblows, you deal far less damage and instead have to damage posture and your posture can be broken easily. Plus to actually be good you have to have good timing for parrying since you can’t dodge worth shit. Plus no summons at all

Sekiro is a rythm game about controlling the enemy, the attacks that they can do, and the general flow of the game. If you're not braindead, there's never any moment where you don't have the bosses by the balls.
Elden Ring is, like all other Souls games, primarily a game where you're on the defensive all the time, only attacking when the boss permits you to do so, and you can't influence jack beyond some AI exploits based on distance and sometimes directions.
Sekiro is far easier for me.
I prefer to play defensively and wait for openings and then punish the enemy for mistakes. Could be why i prefer souls

You quite literally beat the game when you beat genichiro, because after that you most likely understood how it plays and beaten every boss later, people either drop after ogre or beat the game and end up liking it

Elden ring's stance breaking makes the combat closer to Sekiro so you get heavily rewarded for keeping up an offense. Most players aren't willing to interact with stance breaking much since they'd rather roll and counter.
Sekiro is harder but Elden Ring lets you fuck up your build and the order you play it in.
Plenty of people miss loads of bosses (meaning less runes, less levels, less gear) then face the main line bosses under-leveled and get stomped.
Sekiro on the other hand is an action game, you will never really be under-prepared for encounters and it's really just skill.
Sekiro was harder initially but because of how focused the combat system was they could make really complex encounters. They were really solid at slowly building you up so you are always ready for the next encounter. The game becomes quite a lot easier when it clicks for a user but that will vary depending on your skill. In all, yea it's harder but they do a good job of training you to be good at it.
Bloodborne is good too.
Sekiro > Bloodborne >>> Elden Souls games.

I agree with you but I think very few people who are bad at the games aren't playing with a guide to hand. Most of my normie friends who decided to pick it up are googling farming spots, best weps etc. They think I'm mad for having played it blind and beaten it.
Memes aside, the way they increase the complexity of enemy attack patterns and weave in the unblockables is masterful. Regardless of this game or that game being more complex, they really nailed the difficulty curve imo. The only real complaint is that the dodge forward to step on stabs isn't a default ability.
