The boss design is my only complaint about the game, but yeah it's a big one.
Sekiro and Bloodborne proved you can make engaging bosses if you're not catering towards magic/dex/etc builds.
ER bosses feel mostly like DaS2's "slow lumbering sword man" or "20 enemies at once" playbook.
Radahn felt particularly lazy and janky, but having an unlimited supply of companions was cool at least.

I swear every game in the series had 1 or 2 asshole enemies that ruined my day just by seeing them, but this time I meet one in every area. Dogs, birds, those giant hand spiders, I am not having goddamn fun.

There's a fucking bossfight with TWO of them, buffed stats and they basically instant kill me
