Parrying him is good, also if you have a weapon that adds Blood Loss, or Frostbite, he will die faster.
Remember too, that the parry is a feature, not a requirement. Just because you parry him does NOT mean you have to do a critical hit.He is at your mercy during that parry animation and how you choose to damage him can range from 25% to 90% depending on your build and knowledge of the game.

That's the issue with a lot of the enemies in this game. They have absurd movesets and once they start attacking they basically never stop so it's super easy to get stunlocked or stamina drained. The fucking regular knight enemies in the castle are egregious with this shit. Same with the all the stupid guard dog enemies throughout the game.

Yeah you just use a Medium Shield with a lot of PHYS strength. Easy to parry and you take less damage on whiff.
Try too, to use the best kind of parry tutorials, there are some videos that teach you how to do it but they're often relying on the framerate being consistent. That's not everyone's case.
