It's rule of cool. It's stated relatively early on in the game that they are incredibly unwieldy and archaic weapons that take serious dedication to master, as they are dangerous to the user.
The principle behind the FFVIII gunblade, is that by firing a percussive round, the explosion of the cartridge causes the blade to vibrate. The more it vibrates the better it cuts. It's essentially an ultrasonic cutting knife, powered by strong cartridges.
You can hear the blade vibrate at higher pitches with each successive trigger pull, during some of the more unique renzokuken animations:

Is it stupid as fuck? Yeah. But it's at least more interesting than a gun that has a long bayonet affixed to it.

The trigger essentially ejects the sword from the scabbard like a bullet, and when used during an Iaijutsu style draw-slash from the scabbard, the faster draw makes it harder to counter and adds to the cutting force of the slash.

It's not a gun, it's a vibroblade. It fires cartridges/shells into the blade to cause vibrations to make the sword do more damage.
