It looks really good from the videos I watched but I'm not sure it's a good idea to buy it when Elden Ring is getting released one week later.

Many people can only choose one. I'm not one of them (currently) but it was me in the past and I sympathize.
If I had to pick one though, it'd be Elden Ring. I recently finished up Horizon 1 after shelving it right before the finale and I was reminded of what went wrong. That is, melee combat is kind of shitty, mounts are annoying and underwhelming, you can get the best armor and weapons WAY too early, many weapons aren't worth using (I played on hard with pretty much bows only), and the static shot-reverse shot conversations look pretty bad.
I don't expect 2 to fix all of this, but hopefully there's some improvement.

Yes I'm getting it, the image in your post looks cool too. I still haven't beaten the first game because too many games were coming out and I was still playing BotW and Nioh. I also own the first game on PC. This will likely come to PC next year or in 2024.
