The radiation that killed everything before the waddle dees got there hasn't dissipated yet so it weakens Kirby unable to swallow big things but still able to control it.

My guess is Kirby is compatible with the regular enemies when absorbed but isn't compatible with the forgotten land stuff (real world stuff) so this happens.

I don't think Smash is canon after all in Brawl Kirby was a weakling and easily defeated (Going as far as to need Sonic to save him and every other character in the end), But Ultimate tries to sell him as this undefeateble thign above any fictional character ever having him survive over and over pretty much anything on every trailer while killing the rest of videogame characters.
There's no consistency

Kirby has now discovered he is able to control technology in it's original size by just, piloting it in his mouth.
While kirby has been known to swallow things initally bigger than him, very rarely is he able to maintain the original size of what he swallowed.
His robobot was the only case where he was able to maintain the size of the thing he "copied"
Ever since the lost of his robotic ally, perhaps kirby has more sympathetic to technology, and maybe they can be used to assist him, not just as food or copied.
Sure, some abilities grant increase of size, but kirby rarely gets to maintain the giant size, unless he keeps it in his mouth.
In this case, maybe not swallowing, and being able to stay the shape of what is inside, or not entirely, will help this time around.

Kirby is getting techologically intelligent, which is likely storybuilding back from robobot continuing in this story.

I firmly believe that whenever a new vaguely female humanoid figured character appears on a Nintendo game people desperately want to be the first ones to claim they want to fuck it.
