Darkest Dungeon isn't a roguelite and I don't play Hand of Fate but if you lose in FTL, Into the Breach, or Slay the Spire (ascension 0 only, higher ascension levels aren't all winnable) it's because you're not good enough. Every single FTL run on any difficulty is winnable. Some people can even get win streaks on hard without pausing the game. Into the Breach is the same. You might not be able to get perfect runs on hard every time but every run is winnable. Slay the Spire on ascension 0 is piss easy and it shows how shit you are if you think there was nothing you could have done to avoid losing.

I'm pretty sure Darkest Dungeon is coded to fuck with you. Like if you hit too many times it'll force a miss. Or if you're near the end of a dungeon and your party has high HP, enemies will automatically crit.

Hand of Fate/2, literally progressing through the game if can get injured outside of combat, you need food as a random resource, if you dont get it you starve and lose more hp. You can try and offset this food and healing cards, but its all luck. There are even missions where you are not allowed to heal.
FTL - run into a ship with 2 shields and rockets too early with the wrong ship.
Into the Breach - enemies spawn on the opposite side of the map, free hits on buildings
Darkest Dungeon - all hits are roll based, you can miss and they can just crit.
Slay the Spire - get a bad hand, its cards
These are from most to least randomly fucking you i would say in my experience.
I own every single one of these games, and enjoy playing them for the most part, but it is entirely possible to just get fucked and have no say in it. Every videogame can do this though.

You get told exactly what each card can provide when you're putting it in your deck, so levels with food problems you should be adding food sources and levels without healing you need the same and armor/weapon sources to deal with combat. That said, even with proper deckbuilding you can still get fucked by the dealers cards showing up and yours not, but you can minimize the risk. >FTL Run away, pay them off, don't just fight things that are obviously gonna kill you >Into the Breach You can see the spawns a turn in advance, send someone over to deal with it. Also, if they hit a building once or twice who cares, the hit that kills you is the only important one. Not familiar enought with DD to give specific advice but "don't take stupid risks and use the tools provided to minimize the risks you're forced to take" works as a general rule for all RNG games that are well designed.

every fight in FTL felt like RNG for me. i haven't played slay the spire but tainted grail and it felt the same.
to this day the only rogue lite i truly loved is the caribbean sail. didn't feel so powerless because of the freedom (we need more open world rogue lites)
