I still have no idea what StS is like gameplay-wise. I vaguely enjoy card games and roguelites. Can you sell me on it?

I just wanted it to be like Megaman Battle Network. Instead it's essentially a fucking rougelite x10 speedhack.
The game is too fast for its own good, but otherwise okay.
4 characters, lots of builds though the general deckbuilding style of StS is about preparing for the encounters you expect to see and only really going into a build once its safe to do so. Is really quite a difficult game indeed with increasing completion difficulty up to ascension 20. You discard unused cards every turn then reshuffle the deck when you run out of cards so you can build consistent engines and generally predict what cards you will draw. Mana system is tied to relics and certain cards so you can run low-cost builds or take relics and upgrades that let you spam higher-cost cards. Theres a relic that lets you take cards from any of the 4 classes so the maximum potential for wacky decks is absurd.
Personally I like it, but it doesn't scratch the Battle Network itch. It's too hard to make anything deliberate out of your deck and relic build. Unless you plan to go for, like, a 10-loop, there's literally no point to passing up a relic, and often you're forced to just take what good cards you can.

I mean yeah. I love draft but hate having to play with PEOPLE so roguelike deck builders of all stripes hold some appeal to me.
The only part I don't like about Dicey Dungeon is how hard it can be to get a good run with witch. Fucking elimination round.

It's literally the perfect speed. Any slower and it'd be too easy and braindead. The quick pace keeps you on your toes and it's all the more fun thanks to it.
I beat the whole fucking game, all episodes. Witch was hands down the hardest. Why Jester is categorized as a difficulty higher will always be beyond me. At least he doesn't have to spend like three fucking turns just getting a decent offense set up.

Yeh if there's anything that's true of all card games it's that anything that requires a long period of setup and dosen't have a means of reliably and safely stalling is going to be inconsistent trash. Witch can literally brick multiple times a fight and it's soul crushing.
instead of building a deck you kind of just find the right cards and mash away. theres not the same level of strategy as there was in battle network. as a result runs can feel very repetitive, especially since its often more efficient to have less cards
also cant see shit w/ the sprites
I'm glad I'm not the only one. The run where I finally got Harvest Scythe immediately before the final boss felt like coming up for air after a fucking week underwater.
