Suikoden's Tir McDohl - Soul Eater rune kills any non-boss with 100 accuracy.
SEQUEL colony's Lestea Frieven - can make any ally act first in combat, which with Tir instantly beats any non-boss encounter. Also, good, fast AoE damage and can get 100% evade/counterattack for physical bosses.
Wrath of the Righteous Lich Mythic Path Sorcerer. Tons of immunities to common hazards, with merged spellbook has powerful spellcasting abilities, including being able to keep up buff magic that lasts for 24 hours.
Any Pokemon Trainer - Able to shore up any weaknesses the party has by catching a pokemon that can do what the party needs. Also, can't actually die, since he or she only blacks out when they lose.
