Deltarune is more of a FF and Chrono pastiche for the majority of the game. It only gets Earthboundy in the overworld section and whenever Lancer shows up.

People most of them are children stuck in adult bodies. They like that the game is very childish to the point that your mom makes you your favorite home cooking when you visit and you save by calling your dad who gives you life advice.

They love the “wacky” setting and the story that is pretty straight forward but with just enough room for them to project a bunch of their own mental issues on to the “themes”.

It also helps that it was a game that was reasonably good but never picked up steam in the west so they look like they are in the know for having played it.

It's a solid DQ-clone on its own but its relatively bizarre presentation at the time was enough to attract the "i'm so unique" crowd in the mid 00s and it stuck ever since. Kinda like how people brought up Chrono Trigger all the time for instant gamer-cred.

The irony of the Mother-like is that most of the people making them either did not play any of the Mother games but claim to be "long time fans" anyway, or people who played but failed to understand what makes a Mother game in the first place. They try to create a game based on mere notion of what they believe a game to be like, rather than basing it on the game itself.
At least when someone tries to make a Final Fantasy, DQ, BoF, etc clone you can all but guarantee they were truly players and fans of those.
